Why not celebrate St. David's Day with a classic Welsh recipe! A fancy cheese on toast that makes the perfect lunch time treat or afternoon snack.
INGREDIENTS
50g plain flour
50g butter
250ml strong, Welsh ale warm)
200g Snowdonia Black bomber (grated)
2 tsp Welsh Lady English mustard
1 tsp Halen Môn wholegrain mustard
1 tbsp Worcestershire sauce
Thick, sourdough bread
METHOD
In a medium saucepan melt the butter and make a roux with the plain flour.
Stir in the warm Welsh ale until you have a thick sauce.
Add the grated Black Bomber and keep stirring until the cheese has melted and the mixture is like a thick paste.
Mix in the English and wholegrain mustards and the Worcestershire sauce.
Lightly toast 4 slices of your sourdough bloomer before spreading a layer of your cheesy mix on top.
Cook under a hot grill for a few minute, until lightly browned and the cheese bubbling. Enjoy!
