Minted Lamb leg recipe
INGREDIENTS
Mint Rub You can find this in the farm shop or at your local supermarket
Mint Sauce We recommend applying the mint sauce to the lamb for a little extra kick, and to seal in the flavour of the lamb
Lamb Leg Joint Use Bodnants leg of lamb in this recipe!
Salt For that extra Welsh flavour, use Halon Mon Salt!
Oil We recommend olive oil, but you are welcome to use sunflower or rapeseed oil
METHOD
Place the leg of lamb in your roasting dish
Apply olive oil to the leg of lamb, then sprinkle a healthy amount of mint rub all over, with additional mint sauce. Season with salt to your preference.
Cover your roasting dish with a lid or layer of tin foil to pack in moisture and flavour.
Place in your oven, then cook to your preference. Oven Temperature needs to be 200 Degrees Celcius. Follow the below cooking instructions
Rare (very pink) - 20 minutes per 450g - Internal temperature 55-60 Degrees C
Medium Rare (slightly pink) - 25 minutes per 450g - Internal Temperature 61-66 Degrees C
Well Done (No pink) - 30 minutes per 450g - Internal Temperature 67 - 71 Degrees C
👩🍳PRO TIP Make your own lamb gravy. Place one spoonful of lamb gravy granules, with 1 cup of boiling water and add the remaining lamb roasting juices. Stir and then reduce the gravy.
