HOMEMADE CREPES WITH LEMON & SUGAR
INGREDIENTS (Makes 12 crepes)
For the crepes:
140g plain flour
200ml milk
100ml water
2 eggs
25g butter
For the toppings:
Lemon
Sugar
METHOD
For the crepes:
Mix the water and milk together in a jug.
Sift the flour into a medium bowl before adding and whisking in the eggs. Gradually add the water-milk mix, whisking constantly.
Leave the mixture to rest for around 20 minutes.
Melt the butter and whisk it into the mixture.
Heat a frying pan over a medium heat and lightly grease it with a bit of butter.
Spoon half of a medium sized ladle of batter into the pan, swirling it around to ensure an even layer of batter.
Cook for around 50 seconds before flipping and cooking the other side until it begins to bubble.
Slide the crepe on to a plate and top with your toppings.
For the Topping:
Cut & drizzle your lemon, scatter on plenty of sugar and enjoy your crepe!
