This high quality Welsh Black Beef is a native breed of Wales, they are grass fed in the Vale of Clwyd in Llandyrnog Denbigh. These slow grazing cattle are suited to the hills and mountains of Wales making Bryn's beef some of the best tasting in the United Kingdom. Aged for a minimum of 28 days on the bone combined with its natural marbling makes this beef unrivalled in the quality and taste.
About Bryn
Hailing from Denbigh in North Wales, Bryn Williams learnt to appreciate food and its origins from an early age.
He has worked in some of the most prestigious kitchens in London. He has worked under Marco Pierre White at The Criterion, Michel Roux at Le Gavroche for three years, he was senior-sous at The Orrery for four years.
Bryn is the Chef Patron of Odette’s, taking over the property in October 2008. Bryn also is at Porth Eirias, a beach-front Restaurant, Café & Bar on the North Wales Coast. In 2020 Bryn opened his third restaurant at ‘The Cambrian’ hotel in the stunning Swiss Alps. The latest venue is the ‘Touring Club’ in South Wales.
